Il Cavallino, in Podere Santa Giulia, Bibbona (LI) is owned by the Salvadori family. It has been a family business for three generations and today the queen is Romina. Those who know the area of Bibbona know that olive trees have always played a fundamental role, even on the landscape, thanks to the typically Mediterranean microclimate, in fact the sea has a fundamental influence on the aromas as well. The company produces four different types of oil, but we are interested in highlighting the Special Edition obtained from the “leccio del corno” cultivar. Strongly scents of artichoke and fig leaves, light rosemary and sage. In the mouth it is evident the spicy note with the typical delicate but appreciable bitterness, a sign of the presence of healthy polyphenols “extends life”.
It goes well with the classic pappa with tomato, baked fish, grilled meat that here has masters that you can not give up.
