The Vicopisanolio Oil Mill, certified organic agriculture, has on the surrounding hill about 3,000 olive trees of the “frantoio” variety. The olive grove is cultivated biologically with natural fertilizers and, thanks to the incomparable microclimate of Monte Pisano, they give excellent results both in quantity and, above all, in quality.
Our olives are harvested manually at the right maturation, they never come into contact with the ground and are pressed within a few hours in the mill. The pride of the company’s products is the “VICOPISANOLIO – IGP TOSCANO BIO” extra virgin olive oil. The oil has a beautiful golden-green color; if consumed new, a few days from the milling, it is lively, slightly tinges the palate, pleasantly bitter in the mouth, then, over time it rounds and softens.
