The Marco Viola oil mill is located in S. Eraclio, near Foligno (PG). Marco manages it alone. Here are produced the most important olive oils of Italy, and without upsetting anyone, probably in the world. Marco decided some time ago no longer to produce for third parties but dedicates all his experience to his olives, harvested from olive groves climbing the coast of Trevi, as the winds, the sun and the Nature wants. Marco is technologically an avant-garde one, experimets everything that can improve its production, continuous mill, nitrogen, heat exchangers to protect himself from alien fermentations always lurking etc. The aromas of his olive oils can be described, artichoke, sage, aromatic herbs, yes, but should be discorered on a plate to understand that refined level has reached this Umbrian producer.
